Just three simple ingredients create this tasty side of black beans and rice.

This is one of the easiest and most flavorful side dishes I make, so it appears on our table often. It pairs perfectly with a wide variety of Mexican favorites — tacos, enchiladas, fajitas, burritos, nachos, or a hearty salad. A generous scoop of these black beans and rice finishes the meal every time.

Enjoy!
