Smoked Cajun Chicken Thighs Recipe: Juicy, Spiced & Smoky

Smoked Cajun Chicken Thighs are deceptively simple yet deliver bold, smoky flavor — and they’re made with just five main ingredients.

Chicken thighs are one of my go-to proteins. They stay juicy even with longer cooking and are budget-friendly, making them perfect for family meals.

I served six people with a simple boxed mac and cheese side (the kids insist) and the whole meal cost under $10. The chicken tasted like a restaurant-quality dish — juicy, smoky, and full of Cajun kick.

How to Make Smoked Chicken Thighs

Place six chicken thighs into a gallon-size plastic bag. Add 2 tablespoons Cajun seasoning, 1 tablespoon olive oil, 1 tablespoon red wine vinegar (or apple cider vinegar), and 1 tablespoon garlic paste or minced garlic. Massage the bag so the thighs are evenly coated, then refrigerate for several hours or overnight to marinate.

Preheat your smoker to 250°F. I use a Traeger pellet smoker, which makes holding a steady temperature easy. Arrange the thighs skin-side up and smoke for a total of about 2 1/2 to 3 hours.

After roughly 1 1/2 hours, flip the thighs and continue smoking for another 1 to 1 1/2 hours. During the last hour, check the internal temperature; when the thighs reach about 165–170°F they’re done. Rest briefly before serving.

I like to flip them at the midpoint, then let them finish smoking until they hit the target temperature. The result is richly flavored, tender chicken with a pleasant smoky crust.

Check temperatures toward the end; when the thighs register between 165–170°F they’re ready to come off the smoker. Let them rest a few minutes to redistribute juices, then serve.

Ingredients

  • 2 pounds chicken thighs (approx 6 thighs)
  • 2 Tbsps Cajun seasoning
  • 1 Tbsp garlic paste or minced garlic
  • 1 Tbsp olive oil
  • 1 Tbsp apple cider vinegar or red wine vinegar

Instructions

  1. Trim excess skin if desired. Place thighs in a gallon-size plastic bag.

  2. Add Cajun seasoning, garlic, olive oil, and vinegar. Massage to coat evenly. Refrigerate and marinate for several hours or overnight.

  3. Preheat smoker to 250°F. Place chicken in the smoker and smoke for 1 1/2 hours, flip, then smoke another 1 to 1 1/2 hours until internal temperature reaches about 170°F. Rest briefly before serving.
