This refreshing, light breakfast is perfect for anyone aiming to eat clean and lean. It’s quick to prepare on a busy morning and combines fresh fruit with creamy Greek-style yoghurt, a touch of honey, warming cinnamon and crunchy activated pecans. Activating nuts — soaking them in water and salt, then drying at a low temperature — reduces enzyme inhibitors, making them easier to digest while producing a noticeably crunchier texture and fuller flavour. You can activate nuts at home or buy them pre-activated from health food stores. Once you taste activated nuts you may prefer their texture and flavour over raw nuts.
Feel free to customise the toppings: swap pecans for walnuts, pistachios or almonds, or add more coconut flakes. Adjust the sweetness with more or less honey to suit your taste.

- 250g punnet of organic strawberries
- 200g natural Greek-style yoghurt
- 1 tsp raw honey (plus extra to drizzle if desired)
- Pinch of cinnamon
- 1 tbsp activated pecans, roughly chopped
- 1 tbsp coconut flakes
- Wash the strawberries, pat them dry and slice each in half. Arrange them in a serving bowl.
- In a small bowl, combine the Greek-style yoghurt with the honey and a pinch of cinnamon. Stir until smooth and well blended.
- Spoon the yoghurt over the strawberries and scatter the chopped activated pecans and coconut flakes on top.
- If you prefer extra sweetness, drizzle a little more raw honey over the finished dish.
