Salsa Lime Chicken Recipe with Zesty Cilantro and Garlic

I’m so excited — here’s why.

Last week we restarted the remodel on our new downtown Boise apartment. The unit had been badly mishandled by a previous contractor and his crew, who clearly didn’t know what they were doing. After overcoming several obstacles to get the space back into shape, we finally brought in a reliable contractor team. In just one week they’ve made impressive progress.

The apartment is really taking shape and looks glamorous. We’re making many thoughtful changes and adding quality finishes. My husband and I redesigned the open-concept layout ourselves, so the space is well planned and flows nicely. The kitchen will be a joy to cook in, with a great view of downtown Boise. Moving in will be a dream — especially meaningful since we’ve wanted a place there since 2010 and have been planning this remodel for months.

Now, about food.

This salsa-lime chicken has become my husband’s favorite. He ate all six chicken breasts last week — I barely got a bite — and kept telling me, “This is so good.” Any cook knows those words are the best compliment, and I was thrilled. I’m sharing the recipe today because it’s simple, fast to prepare, and the slow cooker does the rest.

This Salsa-Lime Chicken is incredibly easy: minimal prep, then let the crockpot work its magic. It’s a great choice for nights when you want Mexican-inspired flavors without fuss.
