Ingredients
2 cups fresh spinach, torn into bite-size pieces
1/2 medium cantaloupe, diced
4 oz brick cheese, cubed
2 oz sliced red onion, separated into rings
1/4 cup spicy salad dressing
Method
Place the spinach, diced cantaloupe, cubed cheese and red onion rings into a large salad bowl. Gently toss everything together until the ingredients are evenly combined and the fruit and cheese are distributed throughout the greens.
Dress the salad with 1/4 cup of spicy salad dressing, pouring it over the greens and tossing lightly once more to coat. Taste and add a little more dressing if desired.
Serve immediately. This recipe makes approximately 2 servings.
