This salad uses broccoli slaw as the base, giving it plenty of crunch and nutrients. I usually roast or poach a few chicken breasts on the weekend to keep on hand so I can assemble this in minutes during the week. The Thai-inspired almond butter dressing is tangy and savory—if you prefer, swap almond butter for peanut butter.

For the Salad
- 1 10-12oz bag broccoli slaw
- 8 oz chicken breast, cooked and chopped
- 1 small red bell pepper, thinly sliced
- 1/4 cup scallions, chopped
- 1/4 cup cilantro, chopped
For the Dressing
- 1 tbsp almond butter (or peanut butter)
- 1 tbsp toasted sesame oil
- 1/4 cup reduced-sodium soy sauce
- 1 clove garlic, minced
- 1 tsp lime juice
- 1 tbsp honey
Instructions
- In a small bowl, whisk together the almond butter, toasted sesame oil, reduced-sodium soy sauce, minced garlic, lime juice, and honey until smooth.
- In a large bowl, combine the broccoli slaw, sliced bell pepper, chopped cilantro, and scallions. Add the cooked, chopped chicken.
- Pour the dressing over the salad and toss thoroughly to coat. Serve immediately or chill briefly to meld flavors.
