Overview of Fermented Carrots

Fermented carrots are fast and straightforward to prepare. All you need are carrots, sea salt, filtered water, a quart jar, and a weight to keep the carrots submerged. Slice the carrots to your preferred shape, pack them into the jar, add a measured amount of sea salt, cover with filtered water, and weigh them down so they stay under the brine.

In the accompanying video I mention a small tip for keeping the carrots crisp during fermentation — a simple addition that helps maintain crunch. If you prefer visual instructions, check the video for that detail and to see the process in action.

After sealing the jar, leave it somewhere warm (but out of direct sunlight) for a few days. Taste after a few days to determine when the flavor and tang are to your liking. Once they reach the desired acidity and flavor, move the jar to the refrigerator to slow fermentation and preserve the carrots.
