Step 1: Whisk together the flour, salt, baking powder, cinnamon, and nutmeg until evenly combined.

Step 2: In a separate bowl, stir together the sugar, brown sugar, melted butter, eggs, vanilla, milk, and unsweetened applesauce.

Step 3: Add the dry ingredients to the wet mixture and stir gently until just combined. Do not overmix—the batter should be slightly lumpy to keep the muffins tender and moist.

Step 4: Line a 12-cup muffin tin with liners or lightly grease the cups. Divide the batter evenly among the 12 cups.

Tip: Parchment paper muffin liners are my favorite because nothing sticks to them.

Step 5: Bake at 350°F (177°C) for 18–20 minutes, or until a toothpick inserted into the center comes out clean.
