How to make Unicorn Popcorn

Ingredients for this recipe:

  • 8 cups popped popcorn, unflavored
  • 16 oz vanilla candy coating, almond bark, or white chocolate chips*
  • Oil-based food coloring made for candy (do not use regular water-based food coloring)
  • Unicorn sprinkles
  • Mother’s brand animal cookies (a mix of circus animals and mythical creatures)
  • Kosher salt

*If using white chocolate chips, 16 oz is about 2 3/4 cups. Ghirardelli melting wafers require roughly 2 2/3 cups.

Instructions:

Place the vanilla candy coating, almond bark, or white chocolate chips in a heatproof bowl set over a pan of barely simmering water. Stir constantly until fully melted and smooth. You can also melt according to microwave package directions if preferred.

Divide the popped popcorn into three bowls: place 4 cups in a large bowl and 2 cups in each of two medium bowls.

Pour half of the melted coating over the large bowl of popcorn and fold gently with a rubber spatula until the popcorn is evenly coated. Spread this coated popcorn on a sheet pan lined with parchment or wax paper and set aside.
