I’ve kept cooking simple this week, relying on quick, nutritious recipes that use the kale we have on hand. This salad pairs well with a basic vinaigrette, which I toss with the kale and then massage by hand. Massaging softens the leaves and makes the kale more tender and pleasant to eat. The salad stores well, travels easily for lunches on the go, and makes a lovely side alongside roasted chicken or broiled salmon.

Roasted Sweet Potato Kale Salad

This hearty salad is made with massaged kale, roasted sweet potatoes, pecans, and crumbled feta.

Ingredients

  • 6 cups chopped kale
  • 1/4 cup homemade vinaigrette (use a basic vinaigrette of olive oil, vinegar, Dijon mustard, salt, and pepper)
  • 3 tablespoons pecans, chopped
  • 3 tablespoons crumbled feta cheese

For the sweet potatoes

  • 1 large sweet potato, peeled and diced
  • 1 tablespoon olive oil
  • Pinch of salt and pepper

Instructions

  1. Preheat the oven to 400°F (about 200°C).
  2. Line a baking sheet with parchment paper. Place the diced sweet potato on the sheet, toss with olive oil, and season with a pinch of salt and pepper so the pieces are lightly coated.
  3. Arrange the sweet potato in a single layer with space between pieces to promote roasting rather than steaming.
  4. Roast for 20–30 minutes, depending on the size of the dice. When about halfway done (after roughly 15 minutes), flip the pieces so they brown evenly.
  5. While the potatoes are roasting, place the chopped kale in a large bowl and pour the vinaigrette over it.
  6. Massage the dressing into the kale for 2–3 minutes until the leaves become softer and slightly wilted. Massaging breaks down the cell walls and makes the texture more pleasant.
  7. When the sweet potatoes are tender and caramelized, remove them from the oven and let them cool slightly.
  8. Top the massaged kale with the roasted sweet potatoes, chopped pecans, and crumbled feta. Toss gently and serve immediately.

Notes

  • Massaging the kale before serving makes it more tender and improves digestibility.
  • Keep the sweet potato pieces uniform in size so they roast evenly and finish at the same time.
  • Arrange the sweet potato pieces in a single layer on the baking sheet with space between them; crowded pans cause steaming instead of roasting.
  • To store: Transfer leftovers to an airtight container and refrigerate for up to 3 days.
  • To reheat: Warm the roasted sweet potato cubes in the microwave or a low oven before serving if you prefer them warm.
  • To freeze: Cool roasted sweet potatoes to room temperature and freeze in a freezer-safe bag for up to 3 months. Thaw and reheat before adding to fresh kale.
