Ingredients

  • 1/2 lb zucchini, coarsely grated (see notes)
  • 2 large eggs, lightly beaten
  • 1 cup buttermilk
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons basil pesto
  • 2 scallions, finely chopped
  • 3 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 2 tablespoons sugar
  • 3 tablespoons pine nuts
  • 1/4 cup grated Parmesan cheese

Instructions

  • Preheat the oven to 350°F (175°C). Generously butter two standard 9 x 5 x 3-inch loaf pans.
  • Grate the zucchini on the large holes of a box grater. Wrap the grated zucchini in a double thickness of cheesecloth or a clean towel and squeeze out the excess liquid until only a small amount remains. Place the drained zucchini in a small bowl and set aside.
  • In a medium bowl, whisk together the eggs, buttermilk, olive oil, and pesto until smooth. Set aside.
  • In a large bowl, whisk the flour, baking powder, baking soda, salt, and sugar. Stir in the pine nuts and grated Parmesan. Add the wet ingredients and mix until just combined, then fold in the zucchini and scallions. Do not overmix; the mixture should be stiff, more like a dough than a pourable batter.
  • Divide the mixture evenly between the prepared loaf pans and smooth the tops. Bake until the loaves are golden brown and a toothpick inserted into the center comes out clean, about 40 to 45 minutes.
  • Allow the loaves to cool in the pans for 10 minutes, then invert them onto cooling racks to cool completely before slicing.

Notes

About the zucchini – Half a pound (8 ounces) of zucchini should produce about 1½ cups grated before squeezing. After pressing out the excess liquid you should have about 1 cup of drained grated zucchini ready to fold into the dough.
