Why This Salad Works

This chopped salad is deceptively simple to prepare yet looks impressive on a platter. Start with a bed of greens—chopped romaine works beautifully, but any leafy mix is fine. Greens provide vitamins, minerals, fiber, and antioxidants; pairing them with healthy fats from tahini and avocado helps the body absorb fat-soluble vitamins like A, D, E, and K.

I select ingredients for color, texture, and flavor—crisp cabbage, roasted broccoli and asparagus, sweet red pepper, earthy mushrooms, creamy avocado, crunchy seeds, briny capers, and protein-rich chickpeas. Use this as a guide and customize the salad to your taste. If you want to serve it as a main dish, include a protein such as beans, lentils, or another legume. Nuts or seeds can replace sunflower seeds as desired.

Rows of veggies make a beautiful presentation.

A beautiful and colorful presentation…because we eat with our eyes first!

Love Note for Lemon Tahini Dressing

A great dressing can transform a simple salad into something memorable. This lemon tahini dressing is light, creamy, and bright—perfect for warmer months and versatile enough to use on grain bowls, roasted vegetables, or as a dip. Tahini adds healthy fats, calcium, and protein building blocks that complement the salad’s vegetables and help nutrients be better absorbed.
