- 150 ml (2/3 cup) water or vegetable broth

- About 80 ml (1/3 cup) milk
- 50 g (2 oz) feta cheese, crumbled
- 1 small onion, finely chopped
- Black pepper to taste

Instructions
- Preheat the oven to 180°C (350°F).
- Dice the sweet potato and place on a baking tray. Drizzle with 1 tablespoon olive oil, season with salt and pepper, and roast for 10 minutes. Flip, add diced eggplant, sprinkle with the remaining tablespoon of oil, and roast for 15 more minutes or until golden and tender, turning once.
- While vegetables roast, chop the onion, garlic, and chili. In a skillet over medium heat, warm a splash of vegetable oil and sauté the onion, garlic, and chili for 8–10 minutes until the onion is soft.

- Stir in the ground almonds, canned tomatoes with their juice, coconut milk, and water or broth. Bring to a gentle boil, then reduce heat and simmer for about 30 minutes. Add the roasted eggplant and sweet potato pieces about 3 minutes before the end to warm through and meld the flavors. Adjust seasoning with salt and black pepper.
- To make the paratha dough, mix the whole wheat flour with a pinch of salt, 1 teaspoon vegetable oil, and enough milk to form a smooth, pliable dough. Knead briefly and let rest for 10 minutes.
