Life has pulled me in many directions — planning a wedding, preparing a move to Massachusetts, taking on more freelance work, and spending time with my almost-three-year-old daughter. Full disclosure: my husband — and my daughter — are peanut butter fanatics. He will eat it straight from the jar by the spoonful when he thinks no one is watching. So I baked a large batch: 35 super-creamy, soft peanut butter cookies with mini peanut butter cups nestled inside.
Even though I’m sometimes indifferent about peanut butter, these are truly the best peanut butter cookies I’ve made. They’re not dry or crumbly — they’re buttery, gooey, and melt-in-your-mouth soft. The mini peanut butter cups add a creamy, chocolatey surprise in every bite. Paired with a glass of cold milk, they’re pure comfort.

Soft Peanut Butter Cup Cookies

Ingredients
- 1 cup creamy peanut butter
- 1 cup unsalted butter, softened
- 1 cup packed light brown sugar
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 2 cups mini chocolate peanut butter cups
Instructions

Preheat the oven to 350°F (175°C). Line two large baking sheets with parchment paper or silicone mats.

In a large mixing bowl with an electric mixer (paddle attachment) or with a handheld mixer, cream together the peanut butter, softened butter, brown sugar, and granulated sugar until smooth. Add the eggs one at a time, beating well after each. Mix in baking soda, baking powder, and vanilla until combined. On low speed, add the flour and mix until just incorporated. Gently fold in the mini peanut butter cups.

Scoop tablespoon-sized portions of dough and place them on the prepared baking sheets, spacing them about 2 inches apart.

Bake 8–9 minutes, or until the edges are set and the centers still look slightly underbaked. Remove the pans from the oven and let the cookies rest on the hot sheet for 5 minutes so they finish cooking but stay soft and chewy. If desired, press extra peanut butter cups onto the tops while warm.

Transfer cookies to a wire rack to cool completely.
