Chicken & Broccoli Slaw with Creamy Almond Butter Dressing Recipe

When I need a quick, satisfying lunch, this Chicken and Broccoli Slaw Salad with Almond Butter Dressing is one of my go-tos. I often tire of traditional lettuce-based salads, so this crunchy, flavorful alternative is perfect for busy days.

This salad uses broccoli slaw as the base, giving it plenty of crunch and nutrients. I usually roast or poach a few chicken breasts on the weekend to keep on hand so I can assemble this in minutes during the week. The Thai-inspired almond butter dressing is tangy and savory—if you prefer, swap almond butter for peanut butter.
