Pocket Quesadilla: TikTok Tortilla Hack for Quick Melty Snacks

To make a healthier version of the Pocket Quesadilla (the viral tortilla hack from TikTok), I used shredded chicken, avocado, baby spinach, and a wedge of Laughing Cow light cheese.

The TikTok tortilla trend that folds a tortilla into quarters and fills each section with different quesadilla toppings has become a fun, practical way to enjoy a loaded tortilla without the mess. I like calling it a pocket quesadilla because each filling tucks into a snug pocket as you fold.

It’s a simple technique that makes it easy to combine ingredients that might otherwise slide off a regular quesadilla. Below I describe how I put mine together and share a quick step-by-step so you can recreate it at home.

I’m a big tortilla fan and plan to make plenty more of these. I’ve also shared my favorite low-calorie store-bought tortillas elsewhere and often test new fillings and flavor combinations.

How to make a Pocket Quesadilla

Visually divide the tortilla into four equal sections. Make one short cut from the center of the tortilla to the edge (about the length of a knife cut to the rim). Place a different filling in each quadrant, then fold the cut edge over the first section and continue folding in the same direction until the tortilla has been folded into quarters.

Heat a skillet over medium heat, spray lightly with nonstick spray or brush with a touch of oil, and grill the folded quesadilla on both sides until the exterior is golden and crispy and the fillings are warmed through.

For this version I used the following:

  • Precooked, shredded chicken — a convenient protein that you can prep ahead.
  • One wedge of Laughing Cow light cheese — creamy with only about 30 calories per wedge.
  • Avocado — a few slices add richness and healthy fats.
  • Baby spinach — a simple way to add fresh greens and nutrients.

This combination delivers protein, healthy fat, vegetables, and carbs in one easy hand-held meal. Pocket quesadillas are highly customizable, so feel free to swap in black beans, corn, salsa, roasted vegetables, or different cheeses as you like. Ingredients

  • 1 medium tortilla
  • 1 wedge light Laughing Cow cheese
  • 1/2 cup baby spinach
  • 2 ounces shredded chicken
  • 30 grams avocado

Instructions

  • Precook and shred the chicken ahead of time.
  • Lay out the tortilla and make a single cut from the center to the edge, creating a starting point for folding.
