When I started developing this martini, I knew the strawberry component had to be exceptional — not overly sweet and not so thick that it would settle at the bottom of the glass. I wanted the strawberry flavor evenly present in every sip.
After a few experiments, I landed on my Strawberry Vanilla Bean Syrup. The aroma while it cooked told me immediately it was right. Tuning the sugar level created an intense, balanced syrup that became the foundation of this cocktail.

The next decision was the chocolate element. I tested several options:
- Chocolate syrup — too heavy and it sank, so I discarded it.
- Chocolate liqueur — it muddied the flavor and overwhelmed the strawberry, so that didn’t work either.
- Creme de cacao — this kept the strawberry bright and, importantly, didn’t dull the drink’s appealing color. It preserved both flavor and appearance.

Combining the strawberry syrup, creme de cacao, and vodka produced a drink that was nearly perfect. Adding a small dollop of heavy cream rounded the texture and flavor, creating the romantic chocolate-dipped strawberry martini I’d envisioned.

Chocolate Dipped Strawberry Martini
Ingredients
- 4 oz strawberry vanilla bean syrup
- 2 oz vodka
- 1 oz creme de cacao
- 1 oz heavy cream
- red sugar optional
Instructions

Pour the strawberry syrup, vodka, creme de cacao, and heavy cream into a cocktail shaker. Add ice and shake until well chilled and combined.

If desired, rim the glasses with red sugar: pour sugar onto a plate, wet the rims, and dip to coat evenly.
