Last weekend we celebrated Easter a week early with my extended family. This year we traded egg dyeing for decorating Funfetti® cupcakes — a change everyone agreed was tastier and more fun. A recent shopping trip to Walmart left me stocked up on Funfetti® cake and frosting mixes, so I brought everything needed to our family gathering and let everyone create their own colorful cupcakes.

Instead of dyeing eggs one year, we decorated cupcakes — and it quickly became a favorite family tradition. I hope you enjoy this simple, festive idea.

Ingredients

  • 1 box Pillsbury™ Spring Funfetti® Cake Mix
  • ½ cup melted butter (1 stick)
  • 3 large eggs
  • 1 cup water
  • 1 can Pillsbury™ Spring Funfetti® frosting
  • sprinkles

Instructions

  • Preheat oven to 325°F (163°C). Line two cupcake pans with 18 cupcake liners and set aside.
  • In a large bowl, mix the cake mix, melted butter, water and eggs until combined.
  • Fill each cupcake liner about 3/4 full. Bake for 25 minutes or until a toothpick inserted in the center comes out clean. Allow cupcakes to cool completely before frosting.
  • Frost cooled cupcakes with Pillsbury™ Spring Funfetti® frosting.
  • Decorate the frosting with sprinkles and any other candies you like.

  • Buy extra sprinkles and small candies so each person can customize their cupcake.
